Curds and Whey is a cheese manufacturing business at Riversands. Started by Louise Dawood, the cheesery makes fresh mozzarella in various forms and the market response has been extremely favourable!
“I had barely started production when I gave some samples to the speciality cheese shop in Linden, The Cheese Gourmet. As soon as they tasted the quality, they started ordering stock, which meant I had to rapidly ramp up production! Customers clearly also enjoy the cheese, because we had a bumper festive season!” commented Dawood.
Curds and Whey produces fresh mozzarella balls or Fior di latte (the flower of milk) as well as Burrata, which are hand-made pouches of mozzarella filled with shredded mozzarella and cream or stracciatella.
Dawood learnt her craft both locally at the Grootplaas Cheese Academy near Hartebeespoort and in Italy, where she completed a training course at the Italian Culinary Institute in Calabria, Italy.
“Of course the Italians make the best fresh mozzarella in the world and I’ve brought their methods to local cheese enthusiasts,” she said.
